Watergate Cake with Cover-Up Frosting

Servings: 12 servings

INGREDIENTS

1 box plain white cake mix
1 pkg. (3 oz.) instant pistachio pudding
3/4 cup salad oil
3 eggs
1/2 cup chopped nuts
1 cup Seven-Up
1/2 cup coconut

Cover-Up Frosting:
1 pkg. Dream Whip or 1 cup Cool Whip
1-1/2 cup milk
1 pkg. instant pistachio pudding
1/2 cup chopped nuts
1/2 cup coconut

INSTRUCTIONS

Mix cake ingredients and beat well. Bake in a 9x13-inch pan for 40 to 45 min. at 350°F.

Frosting:
Beat all ingredients until thick and spread on cake. Sprinkle with nuts and coconut, mixed together

the icing comes out better is you use both dream whip and coolwhip.you put the dream whip,pudding mix and milk in a bowl and mix until its stiff and then you add i medium tub of cool whip. November 4, 2000

I brought out this recipe to serve at work on St. Patrick's Day. It was a real hit...only the 30 yr. olds I work with didn't get it! Then I thought, they weren't even born when this all happened. Make this cake 2 days ahead of time. It is good the first day, but much better the second day! March 18, 2004
