INGREDIENTS
1-1/2 cup self-rising cornmeal
2 eggs
1 sm. onion, chopped
1 cup milk
3/4 cups cheddar cheese, melted
1/2 cup oil
1/8 tsp. salt
1/2 cup creamed corn
2 jalapeno peppers, chopped (optional)
INSTRUCTIONS
Mix all ingredients and pour into long baking dish. Bake in oven for 1 hour at 350°F or until brown.
