Coconut-Raisin Cookies

Servings: 5 dozen

INGREDIENTS

1 cup soft unsalted butter
1 tsp. vanilla
1-1/2 cups brown sugar, well packed
2 eggs, well beaten
2-1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup coconut
1 cup raisins
1 cup chopped nuts

INSTRUCTIONS

Cream butter and vanilla-add the brown sugar gradually beating after each addition. Add eggs beating until fluffy. Mix flour, soda and salt then add to the butter mixture. Mix until well blended. Add coconut, raisins and nuts-blend in well. Drop by tbsp. onto ungreased cookie sheet. Dip a flat bottom glass in granulated sugar then flatten the cookies slightly. Dip the glass in the sugar for each cookie. Bake 375°F for about 8 minutes or until golden brown. Do not over-bake.
