Fried Mozzarella Sticks

INGREDIENTS

6 oz. Mozzarella or Monterey Jack cheese (solid block)
2 Tbsp. milk
1/4 cup all-purpose flour
1 egg
1 tsp. milk
3/4 cup seasoned fine dry bread crumbs
solid shortening (for frying)

INSTRUCTIONS

Heat 2 to 3 inches of shortening to 360°F in deep fryer or deep saucepan. Cut block of cheese into 4 equal parts. Cut each fourth into 6 equal pieces (each about 2x1/2x1/2-inch). Place 2 tablespoons of milk in shallow bowl. Dip sticks in milk; coat with flour. Beat egg and remaining milk in small bowl. Dip floured cheese sticks in egg mixture; roll in bread crumbs, coating thickly. Freeze 25 minutes. Fry several sticks at a time in hot shortening for 30 to 45 seconds, or until golden brown and sticks float on top. Drain on paper towels and serve with tomato sauce, if desired. Sticks may be prepared way ahead of time and frozen. Frying time will be 45 to 60 seconds longer.

Very Good. I use panko bread crumbs to give them more crunch. And a little hot sauce with the milk wash. February 14, 2004
