Dumplings with Tomatoes and Zucchini

INGREDIENTS
1/4 c Chopped onion
2 tb Cooking oil
4 lg Tomatoes, peeled and chopped
1 tb Minced fresh basil -OR-
1 ts Dried basil
1 ts Sugar
1 ts Salt
1/4 ts Pepper
2 md Zucchini, peeled and cubed
MMMMM---------------------PARMESAN DUMPLINGS--------------------------
1 Egg, lightly beaten
1 c Grated Parmesan cheese
INSTRUCTIONS
In a large skillet, saute onion in oil until tender. Add tomatoes, basil, sugar, salt and pepper. Simmer, covered, for 20 minutes. Add zucchini. Cook, covered, for 15 minutes or until tender. For dumplings, combine egg and cheese. Drop by tablespoons onto tomato mixture. Simmer, covered, for 5 minutes or until dumplings are firm.
