Fruit Stand Chicken Salad

INGREDIENTS
2 c Cubed cooked chicken
1 c Chopped celery
1 c Seedless grapes, halved
4 sm Nectarines, diced
1/2 c Mayonnaise
2 tb Lemon juice
2 tb Honey-Dijon nustard -OR-
1 tb Dijon mustard and 1 tb honey
1 tb Snipped fresh or frozen
-chives
Salt and pepper to taste
1 Head Bibb lettuce, washed
-and dried
1/2 c Lightly toasted sliced
-almonds
INSTRUCTIONS
In a large mixing bowl, combine chicken, celery, grapes and nectarines. In a small bowl, combine mayonnaise, lemon juice, mustard, chives and salt and pepper. Add dressing to salad and toss lightly. Serve on lettuce leaves. Sprinkle with toasted almonds.
