A Special Carrot Cake

INGREDIENTS

Cake:
2 c. sugar
4 eggs
2 t. cinnamon
2 t. salt
1 1/2 c. chopped walnuts
1 1/2 c. vegtable oil
2 1/4 c. flour
2 t. baking soda
3 c. grated carrots

Frosting:
1 - 8 oz. pkg of cream cheese, softened
2 t. vanilla
1/4 c. margarine or butter, softened
1/2 box powdered sugar, sifted

INSTRUCTIONS

Cake:
Combine oil, eggs, sugar, beat at medium speed for 2 minutes. Sift all dry ingredients together. Add to egg mixture, beat on low speed for 1 minute. Fold in carrots and walnuts. Pour into greased and floured 13x9-1/2x2-inch pan. Bake for 300°F for 1 hour. Cool cake completely before frosting.

Frosting:
Blend room temperature cream cheese and butter or margarine. Add vanilla. Gradually beat in sugar. Frost cooled cake.

hi, your site has wsonderful reciepes and thank you for that but however they are not very clear, (half a box of sugar--half a box of what? we dont know!) im really sorry but i think they should be made a little more clearer...thank you! July 18, 2004

Is 2 tspns salt right? I found this too much and made that less than 1 spoon - but this is a very mor-ish cake! July 5, 2006
