Lilikoi (Passion Fruit) Bars

SERVINGS

2 dozen scale / convert

INGREDIENTS


Crust
2 sticks butter
2 cups flour

Filling
1 can lilikoi concentrtate
4 eggs
2 cups sugar
1 dash salt
4 tbsp. flour
1 tsp. baking powder
Powdered sugar (optional)

INSTRUCTIONS

Reduce lilikoi concentrate by half. While reducing, cut flour into butter and press into baking pan. Bake at 350°F for 25-30 minutes or until golden brown.

For filling, mix eggs, sugar, concentrate, and salt. Mix flour and baking powder together then add to egg mixture. Pour evenly onto crust and bake for another 25 minutes or until filling is carmelized on top. Dust with powdered sugar.

CHEF COMMENTS

You can use any other flavoring if you like. (i.e. lemon, guava)
