Fast and Easy Potato Pancakes

INGREDIENTS

1/4 cup milk
2 eggs
2 cup potatoes, peeled and diced into 1" cubes
1 small onion cut in chunks
3 Tablespoons flour
1/4 tsp baking powder
salt and pepper to taste

INSTRUCTIONS

Place all ingredients in a blender in the order they are given above, Pulsate on chop until they are blended, about 1-2 minutes. Heat a greased griddle until it is very hot, about 375°F. Pour onto the griddle into the size pancake you wish. Serve with Apple Sauce, Jam or sour cream.

CHEF COMMENTS

These are fast to make and no clean up to speak of, also the potatoes do not discolor.
