Bhindi Bajhi (Spicy Okra)

INGREDIENTS

1 tbsp. oil
1 clove garlic
10 to 12 bhindi (okra) per serving
3 bay leaves
1 onion, chopped
1/2 tsp. turmeric
1/2 tsp. curry powder
2 tsp. fresh coriander

INSTRUCTIONS

Heat the oil in a pan and fry the garlic until golden brown. Add to the onion and bay leaves and fry for 1 minute. Add the spices and fry. Wash and trim the bhindi, then chop into small pieces. Add to the pan and cook for 4 to 5 minutes. Add 2 tsp. coriander. Heat for another minute, then serve.
