Aam Ki Meethi Chatni (Sweet Mango Chutney)

INGREDIENTS

4 med. mangoes, sweet but firm
1 tbsp. finely chopped mint leaves
1 pinch asafoetida powder
1/2 tsp. white cumin seeds
Sea salt, to taste
1/2 tsp. red chili powder
1 tbsp. crushed molasses sugar

INSTRUCTIONS

Clean and slice the mangoes. Place all ingredients on a sil and grind coarsely with a batta (or use a mortar and pestle). Remove to a serving dish. Add a little water if the mixture is too thick and lumpy, and blend. Chill before serving.

CHEF COMMENTS

An exotic preparation to delight your guests, and made quickly, this sweet chutney usually has a thick consistency and can be taken with packed lunches and picnics.

It turned out very nice. We had it with a roasted pork loin and it was fairly decent, though not exactly our usual fare.
