Drop Doughnut Holes

Servings: 4 dozen
INGREDIENTS
2 eggs
1/3 cup sugar
1 tsp. salt
2 tbsp. melted margarine or cooking oil
1-2/3 cup flour
3 tsp. baking powder
1/3 cup milk
1/4 tsp. lemon extract
1/4 tsp. nutmeg
INSTRUCTIONS
Beat eggs until light; add sugar, salt, oil, extract, and nutmeg and mix well. Mix flour with baking powder; add alternatively with milk to egg mixture. Drop by 1/2 teaspoonsful into deep hot oil and fry approximately 2-1/2 minutes, or until brown. Doughnuts will rise to the surface, so continue submerging them to assure even cooking. Drain on paper towels. Shake with sugar in a bag.
