Maandazi (East African Doughnuts)

Servings: 1 batch
INGREDIENTS
1-1/4 cup flour
2 tbsp. sugar
1 tsp. baking powder
1 tsp. ground cardamon
1 pinch of salt
1 egg
1/4 cup milk
Oil, for frying
INSTRUCTIONS
Mix together the dry ingredients. Mix in egg and milk until well blended. Roll out as for a jelly roll to approximately 3/4-inch thickness. Cut using a doughnut cutter with center ring removed. Fry in hot (365°F) oil until golden brown. If desired, roll in confectioner's sugar before serving.
