Leftover Potato Cakes

INGREDIENTS
Leftover mashed potatoes
1 egg, beaten
Parsley, chopped
Celery, chopped
Celery seed
1/4 cup chopped sautéed onions or raw onion, grated
1 pinch grated nutmeg
Flour, breadcrumbs, or crushed cornflakes
Butter or Fat
INSTRUCTIONS
Mix all ingredients through and including nutmeg. Shape mixture into little cakes. Dip the cakes in the flour, crumbs or flakes. Melt butter in a skillet. Brown the cakes in the butter on one side, reverse them and brown the other side.
