New Mexico Ranch-Style Eggs

INGREDIENTS
8 oz. tomato sauce
2 med. onions, chopped
2 med. green bell peppers, chopped
1/2 cup grated American cheese
1 dash cayenne
1/2 tsp. salt
4 tortillas
1/2 cup olive oil
4 fried eggs
2 pork sausages, fried and diced
INSTRUCTIONS
Combine tomato sauce, onions, bell pepper, cheese, cayenne and salt. Mix and refrigerate. Fry tortillas in olive oil; place a fried egg on top of each tortilla. Pour sauce over all; garnish with sausages. Sauce can be heated, if desired.
