Arizona Sweet Potatoes

INGREDIENTS
4 cups sweet potatoes, cooked, peeled and cubed
1 cup green pepper, chopped
1 cup onions, chopped
1/2 cup shortening
Salt, to taste
Pepper, to taste
INSTRUCTIONS
Mix sweet potatoes with green pepper and onions. Sauté vegetables in hot shortening until brown and crisp. Add salt and pepper to taste.
