Potato Fried Cakes

Servings: 4 servings
INGREDIENTS
1 cup mashed potatoes
2 cups sugar
3 tbsp. lard, melted
3 eggs
3 cups flour
1 cup buttermilk
1 tsp. baking soda
2 tsp. baking powder
Salt, to taste
Nutmeg, to taste
INSTRUCTIONS
Mix all ingredients together. Roll out on floured board and cut with round cookie cutter. Drop one-by-one in a deep fryer and cook to a light brown. Drain.
