Baked Zucchini and Tomato Casserole

INGREDIENTS

4 lg. tomatoes, diced
2 md. zucchini, sliced
1 pkg. Stove Top Stuffing Mix
8 oz. cheddar cheese, grated
Salt, pepper and garlic powder, to taste

INSTRUCTIONS

Cut up the tomatoes and put them on the bottom of a greased baking pan. Slice the zucchini and place on top of the tomatoes. Prepare the Stove Top Stuffing Mix and add to the top of the vegetables. Top with the grated cheddar cheese and season with salt, pepper and garlic powder. Bake at 350°F for 20 minutes.
