Utah Celery Fritters

INGREDIENTS

1 cup sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. white pepper
3/4 cup milk
2 lg. eggs, slightly beaten
1-1/2 cup minced celery
Deep fat for frying

INSTRUCTIONS

Combine first four ingredients. Blend milk and eggs, then add to flour mixture. Beat until smooth. Add celery, mixing well. Drop by tablespoon into deep hot fat heated to 365°F. Fry approximately 3 minutes, turning once.
