Zucchini Pie

SERVINGS

6 servings scale / convert

INGREDIENTS

2 cups zucchini, diced or grated
1/2 onion, finely chopped
1/2 cup Bisquick Pancake Mix
2 eggs, well beaten
1/4 cup oil
1/4 cup Parmesian cheese
1/4 tsp. parsley flakes
1/4 tsp. pepper
1/4 tsp. salt

INSTRUCTIONS

Mix all ingredients well and immediately place in a pie plate coated with cooking spray (oil). Bake 30 to 50 minutes in a 350°F oven until lightly browned and inserted toothpick comes out clean.

I have to tell you, i didn't enjoy this recipe at all. I think the onions need to be sauteed prior to incorporating them into the mix. I am sorry- definitely didn't enjoy this one. May 3, 2004
