Delicious and Easy Chocolate Espresso Cookies

Servings: 2 dozen

INGREDIENTS

1 box brownie mix
Oil, substituted for butter (equal quantity)
2 tbsp. espresso, very finely ground

INSTRUCTIONS

Make brownie mix according to package directions, substituting equal amount of oil for butter. Add espresso; mix well. Chill the dough until firm. Spoon by rounded tablespoons on cookie sheet. Bake at 350°F for 10 to 12 minutes.

CHEF COMMENTS

The espresso makes it quite strong, you may want to add less if you are not as into coffee flavor.

This is not for the kiddies!! Not a good late night snack!! It gives you a serious charge!!
