Rougail de Mangues Vertes

Servings: 1 cup
INGREDIENTS
3 green mangoes
4 scallions, chopped
1 sm. yellow onion, sliced
1/8 cup Spanish thyme leaves
1 tbsp. vegetable oil
Salt and pepper
Chili pepper, to taste
INSTRUCTIONS
Peel the mangoes and cut the flesh into chunks. Discard the seeds. In a sauce pot simmer the mangoes with enough water to cover for 15 minutes. Combine the mangoes with the scallions, onion, thyme and oil. Reduce to a paste in the blender or processor. Store in the refrigerator in a covered bowl. Add the salt, pepper and chili pepper before serving as a dip or spread on canapes, crackers, toast or casava leaves.
