French-Fried Mushrooms

Servings: 30 appetizers

INGREDIENTS

1 egg
1/2 cup milk
1/2 tsp. salt
30 med. mushrooms
1/3 cup flour
1 cup cornflake crumbs
Oil or shortening for frying
Salt, to taste
Grated parmesan cheese
Lemon wedges, if desired

INSTRUCTIONS

In shallow dish, beat egg with milk and salt. In another dish, roll mushrooms in flour. Dip mushrooms in egg mixture and coat with cornflake crumbs. Fry in hot oil or shortening in fryer for 1 to 2 minutes until golden. Drain. Sprinkle with salt to taste and grated parmesan cheese. Serve with lemon wedges, if desired.
