Marian's Crabmeat Quesadillas

INGREDIENTS

Med. flour tortillas, soft
Grated cheddar, mozzarella, monterey jack or soy cheese
Chopped lobster or crabmeat, real or imitation
Green onions, diced
Dried apricots, chopped
Slivered almonds, toasted
Parsley, chopped
Vegetable oil
Salsa

INSTRUCTIONS

Combine all ingredients except tortillas, oil, and salsa. Make a sandwich of two tortillas filled with mixed ingredients. Heat oil in skillet. Brown assembled quesadilla until cheese melts, then turn and brown on other side. Serve with salsa.

CHEF COMMENTS

For smaller portions, put mixed ingredients on half of one tortilla and fold over like an omelet. Brown each side.
