Red Pepper Hoummus

Servings: 2 cups

INGREDIENTS

2 large Garlic cloves, chopped
1 can Garbanzo beans (chick peas) drained
1/3 cup Tahini
1/3 cup fresh lemon juice
1/2 cup chopped drained roasted red peppers (from the jar)

INSTRUCTIONS

With your processor running, drop garlic through the feeder tube and mince. Scrape down sides of work bowl. Add chickpeas, tahini and lemon juice. Process until mixture is smooth. Add roasted peppers. Process until peppers are finely chopped. Season with salt and pepper. Transfer to small bowl. (can prepare a day or two ahead of time) Cover and chill. Bring to room temperature before serving. Serve with Pita wedges and/or a variety of raw veggies.

We love Hoummus at our house. This put a real good spin on it. I have had it from the stores but they have a lot of junk in them. This was by far a hell of a lot better tasting and easy to make. Goes great with home baked pita chips. September 11, 2004
