Shallot Bruschetta

INGREDIENTS

3 tbsp. olive oil
5 lg. shallots or green onions, thinly sliced
4 slices french bread (3x5)
Romano cheese, freshly grated
Black pepper, freshly ground

INSTRUCTIONS

Preheat broiler. Heat oil in a heavy small skillet over medium heat. Add shallots and sauté until tender, stirring frequently, approximately 5 minutes. Broil one side of the bread until toasted. Spread shallot mixture on second side of bread. Sprinkle generously with pepper and cheese. Broil until beginning to brown. Serve immediately.

Real GOOD! I made them at work but I used carmelized shallots and added some fresh rosemary. People liked them because they were not your run of the mill Bruschetta. So we sold out of them. We made over 300 of them too! February 18, 2004
