French Carrot Salad

SERVINGS
4 to 6 servings
INGREDIENTS
5-6 carrots, scraped and grated
3 tbsp. olive oil
2 tbsp. white wine vinegar or cider vinegar
1 tbsp. lemon juice
1 bunch scallions, chopped
1/4 cup of fresh chopped parsley
1 scant tsp. sugar
freshly ground black pepper, and salt(I use sea salt) to taste
INSTRUCTIONS
Place grated carrots in medium bowl, add chopped parsley, and chopped scallions; toss to mix. Add olive oil, vinegar, lemon juice, sugar, salt and pepper, and mix thoroughly. Refrigerate at least 1 hour.
