CHEF COMMENTS

*For diabetic use, why not try Cary's SF Syrup or make your own maple flavored syrup?

In the North country the people make one of the aristocrats of sweets: maple syrup. It cooks down to a delicious candy, but is delicate, so watch your heat!

Both pecans and walnuts are good with maple; it's hard to say which is better. You may wish to include a few of your favorite.

this is one of the top popcorn ball recipes I have ever had, one thing, this will harden very quickly and is very hot I use cotton gloves with thin rubber gloves over them with 4x sugar to keep from sticking to my hands to form into balls (work fast) April 2, 2004
