Barbecued Country Ribs

INGREDIENTS

2 lbs. country style pork ribs

sauce:
1 tbsp. olive oil
1 med. onion, chopped
1 green pepper, chopped
1/2 cup celery, chopped
4 tbsp. lemon juice
2 tbsp. brown sugar
3 tbsp. worcestershire sauce
1/2 tsp. cayenne pepper
1 cup ketchup
1 cup water
1/2 tsp. dry mustard(mild or hot)
1 tsp. celery salt

INSTRUCTIONS

Preheat oven to 425°F, lay ribs in shallow 13x9 or larger pan, roast at 425°F for 30 minutes. In the meantime make the sauce. Saute onion, pepper and celery in the oil until soft. Add all other ingredients; simmer for around 20 minutes. Pour sauce over ribs after the 30 minute roasting period. Reduce oven to 325 and roast for 1-1/2 to 2 hours. Serve over hot buttered noodles.

CHEF COMMENTS

To keep ribs from drying out while roasting with sauce, from time to time spoon sauce over the ribs while roasting.
