Fruit Roll Up Cookies

INGREDIENTS

½ lb. (8 oz. package) cream cheese
½ lb. (2 sticks) sweet butter unsalted
2 egg yolks (reserve egg whites in bowl)
2 cups flour
3 jars of any fruit pastry or pie filling
Sugar

INSTRUCTIONS

In large bowl, combine cream cheese, butter until creamy. Add 2 egg yolks, gradually add flour. Blend with hands and form into one large ball. Wrap with saran wrap and refrigerate overnight.

On a floured board, roll out dough. With a knife, make six squares (like a tic-tac-toe board). With a tablespoon drop onto one square. Roll dough as it looks like a log. Dip unfolded side in reserved egg whites and then dip in sugar and lay sugared side up on ungreased cookie sheet. Repeat until dough is completely used. Bake at 325°F for 20 minutes.

CHEF COMMENTS

You may want to double the recipe and make two balls of dough at the same time.
