Potato Cake

INGREDIENTS

1 cup margarine, softened
2 cups sugar
2 eggs
1 cup cold mashed potatoes
1 tsp. vanilla extract
2 cups flour
1/4 cup cocoa
1 tsp. baking soda
1 cup milk
1 cup chopped nuts

INSTRUCTIONS

Cream butter and sugar until fluffy. Add eggs one at a time beating well. Blend in potatoes and vanilla. Mix flourcocoa and baking soda and alternately add with milk blending well. Stir in nuts. Pour into a greased 13x9x2-inch baking pan. Bake at 350°F for 40-45 minutes or until cake tests done. Cool on a wire rack. Frost with your favorite icing.
