Meatball Sub Casserole

INGREDIENTS

1/3 cup chopped green onions
1/4 cup seasoned bread crumbs
3 tbsp. grated Parmesan cheese
1 lb. ground beef
1 loaf Italian bread cut into 1-inch slices
1 pkg. cream cheese, softened
1/2 cup mayonnaise
1 tsp. Italian seasoning
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1 jar spaghetti sauce
1 cup water
2 cloves garlic, minced

INSTRUCTIONS

In a bowl, combine onions, crumbs and parmesan cheese. Add beef and mix well. Shape into 1-in balls; place on a rack in a shallow backing pan. Bake at 400°F for 15-20 minutes or until no longer pink.

Meanwhile, arrange bread in a single layer in an ungreased 13x9x2-inch baking dish (all of the bread may not be used). Combine cream cheese, mayonnaise, Italian seasoning and pepper; spread over the bread. Sprinkle with ½ cup mozzarella. Combine sauce, water and garlic; add meatballs. Pour over cheese mixture; sprinkle with remaining mozzarella. Bake, uncovered at 350°F for 30 minutes or until heated through.

I used ready-made Italian meatballs found in the freezer for a quicker way to make this. It was great. I took it to a potluck and several women asked me for the recipe. September 21, 2004

I couldn't find Italian Bread, but I found a day old loaf of sourdough that was marked for quick sale, and it worked great! I spread the cheese mixture on the bread first, then cubed the bread for easier serving. I also used frozen meatballs. Next time I think I will use the garlic and herb cream cheese and ricotta instead of mayo. My family LOVED this, even my picky 5 year old. April 18, 2007
