Cornmeal Waffles

SERVINGS

1 recipe scale / convert

INGREDIENTS

1 cup yellow corn meal
1 tsp. salt (scant)
2 tsp. baking powder
2 eggs, separated
1-1/2 cup milk
2 tbsp. honey or raw sugar
5 tbsp. vegetable oil
1 cup whole wheat flour

INSTRUCTIONS

Sift dry ingredients together twice. Combine beaten egg yolks, milk and oil and stir in dry ingredients until just blended. Fold in stiffly beaten egg whites. Bake on hot waffle iron. Delicious when served with apple sauce and cream, instead of syrup.
