Lemon-Butter Spritz Cookies

SERVINGS
12 dozen scale / convert
INGREDIENTS
2 cups butter (no substitutes)
1-1/4 cup sugar
2 eggs
1 lemon, grated peel of
2 tsp. lemon juice
1 tsp. vanilla extract
5-1/4 cups all-purpose flour
1/4 tsp. salt
Colored sugar
INSTRUCTIONS
In a large mixing bowl, cream butter and sugar. Add the eggs, lemon peel, lemon juice and vanilla; mix well. Stir together flour and salt; gradually add to creamed mixture. Using a cookie press, shape into designs on ungreased cookie sheets. Sprinkle with colored sugar. Bake at 400°F for 8-10 minutes or until lightly brown around the edges.
