Oatmeal Refrigerator Cookies

Servings: 6 dozen

INGREDIENTS

1-1/2 cups flour
1 tsp. baking soda
1-1/2 tsp. salt
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs, well beaten
1 tsp. vanilla
3 cups oats

INSTRUCTIONS

Sift together flour, soda, and salt. Cream shortening; add sugars gradually; beat until light. Add eggs and vanilla. Combine dry and cream mixtures; blend thoroughly. Add oats. Pack into frozen fruit juice cans. Chill thoroughly. Detach bottom of can; use to push dough out to slice. Cut into thin slices; bake on ungreased baking sheet in 400°F oven for 6-8 minutes.
