Tzatziki Sauce

INGREDIENTS

8 oz. plain yogurt
1 small cucumber, peeled, seeded and chopped
2 cloves garlic, peeled and pressed
1 tbsp. fresh lemon juice
1 tsp. olive oil
1 tsp. fresh mint or dill, chopped
Salt and fresh ground pepper, to taste

INSTRUCTIONS

Squeeze the moisture out of the cucumber in a towel, add to the rest of the ingredients, mix well and serve with hot pita bread.

CHEF COMMENTS

Wonderful! Great as a baked potato filling too.

Simple yet delicious recipe. Prep time is minimal. Was a great hit with my family. I also tried it with 1/4 tsp. of dried dill instead and it was great too. It is a healthy & delicious alternative for baked potato instead of sour cream May 1, 2004
