Michele's Chocolate Truffle Cheescake

INGREDIENTS

Chocolate crumb crust:
1-1/2 cups sugar cookie crumbs
1/2 cup powdered sugar
1/2 cup cocoa powder
1/3 cup butter, melted

Cheesecake Filling:
2 cups semi-sweet chocolate chips
3 pkg. (8 oz. each) cream cheese (not low-fat)
1 can (14 oz.) Eagle Brand sweetened condensed milk
4 eggs
2 tsp. vanilla extract

INSTRUCTIONS

Crust:
Mix well in medium bowl then press firmly on bottom of 9-inch springform pan. Set aside.

Preheat oven to 300°F. In heavy saucepan over low heat melt chips in one teaspoon melted butter, stirring constantly. Set aside.

In large mixing bowl beat cream cheese until fluffy. Gradually beat in Eagle Brand milk until smooth. Blend in melted chocolate and eggs and vanilla. Pour into prepared crust. Bake for 1 hour and 5-10 minutes until center starts to firm. Cool for at least one hour, then refrigerate overnight.
