Party Potatoes

INGREDIENTS

8-10 medium white potatoes
8 oz. low-fat sour cream
8 oz. cream cheese
Salt and pepper, to taste
1/2 cup milk
Chives, to taste
Papika

INSTRUCTIONS

Peel, salt and cook potatoes until tender. Drain and mash. Mix in sour cream, cream cheese, pepper and milk. Add fresh or dried chives to taste. Place potato mixture in a sprayed baking dish and dot with butter. Sprinkle lightly with paprika. Bake at 350°F for 30 minutes.

CHEF COMMENTS

Adding 1/4 c. instant potato flakes will help keep a good consistency if this dish needs to stand a little while for a dinner party.
