Peanut Butter Buckeyes

INGREDIENTS

1 cup butter
1 lb. confectioners' sugar
12 oz. crunchy peanut butter
4 oz. paraffin
12 oz. semi-sweet chocolate chips

INSTRUCTIONS

Combine butter, sugar and peanut butter in a medium bowl; blend until smooth. Roll into 1-inch balls. chill. Place paraffin and chocolate chips into top of a double boiler and melt over hot (not boiling) water. Coat balls by dropping one at a time. Place on waxed paper to cool.

Doesn’t seem to use the correct measurements. I tried this recipe twice, and each time had a sticky, non useable mess. Either need less butter, or more powdered sugar. December 15, 2002

I agree with Rosco. I came up with a sticky mess also. Even after chilling the mixture it was still too soft. Seems to have too much butter. January 1, 2004
