No-Bake Cookies

Servings: 3 dozen

INGREDIENTS

2 cups sugar
3 cups oatmeal
1/3 cup margarine
1/4 cup cocoa powder
1/4 cup dry milk
1/2 cup peanut butter
1/2 cup water
1 tbsp. vanilla

INSTRUCTIONS

Mix first 4 ingredients in a saucepan. Heat until it boils, stirring well. Remove from heat; add peanut butter, stirring until it 'melts in'. Add oatmeal, cocoa, and vanilla. Mix thoroughly. Drop by tablespoon on wax paper or clean smooth table top. Let them cool.

CHEF COMMENTS

I generally stir in more oatmeal than the recipe calls for because they harden up faster, and we can eat them sooner. ;)

I made a batch of these cookies and they were delicous. I did have to do a little reading ahead. The directions can be a little misleading. Mix 4 ingredients sugar, margarine, dry milk, and water should be whats said. I am just saying that through the mom who would have kids running and screaming and wouldn't have time to think what she was doing. I put the oatmeal in last so the cookies could harden with the last ingredient added. I did add 2% whole milk while stirring in the oatmeal because it was tough to stir by hand. Did that defeat the purpose of the dry milk? Also after placing the 2 dozen or so cookies on the wax paper I put them in the fridge. I like them chilled. I loved the recipe and thank you for having it posted online. June 23, 2000
