No Bake Chocolate Oatmeal Cookies

Servings: 3 dozen

INGREDIENTS

2 cups sugar
2 tbsp. cocoa
1/2 cup milk
1/2 cup butter or margarine
1/2 cup peanut butter
2 cups uncooked rolled oats
1 tsp. vanilla

INSTRUCTIONS

Put 2 cups of sugar in a boiler; add 2 tablespoons of cocoa. Stir. Add 1/2 cup of milk. Add 1/2 cup of butter or margarine. Stir. Put the boiler on the stove. Turn heat to low; cook until it starts to boil. Stir as it cooks. Boil about 2 minutes; remove from stove. Add 1/3 cup of peant butter; add 2 cups of rolled oats. Stir until well mixed. Add 1 teaspoon of vanilla; let cool. Drop on plate by spoon and refrigerate.

CHEF COMMENTS

I make these all the time for my children. Since you do not have to bake these, low fat or fat free butter can be used. Just watch closely on thestove. You may also use skim milk. It will help reduce the fat in thecookies. Hope you enjoy!!!!

These were great! Maybe a little chewy, but some no-bakes come out too dry and these did not. Only problem is how can you eat just one??? September 3, 2003

Excellent!!! No bakes are my absolute *favorite* cookie..and this recipe is the best one I've found yet!!!!.. the only problem I have now.. is staying OUT of the cookies!!!! LOL.. February 4, 2004

One thing to note - the longer you let the stuff set before scooping it onto the plate, the taller they will be. If you drop them immediately they go pretty flat. I use wax paper on a cookie sheet then refrigerate. November 30, 2008
