Marble Cheesecake

INGREDIENTS
1 cup graham cracker crumbs
3 tbsp. sugar
3 tbsp. butter, melted
24 oz. cream cheese, softened
3/4 cup sugar
1 tsp. vanilla
3 eggs
2 squares unsweetened baking chocolate, melted
INSTRUCTIONS
Heat over to 350°F. Mix crumbs, sugar, and butter. Press into bottom of 9-inch springform pan. Bake 10 minutes. Increase temperature to 450°F. Beat cream cheese, sugar, and vanilla at medium speed with electric mixer until well blended. Add eggs, 1 at a time, mixing well after each addition. Blend chocolate into 1 cup of the batter. Spoon plain and chocolate batters alternately over the crust and run knife through batters several time to marble. Bake 10 minutes. Reduce over to 250°F and continue baking for 30 minutes. Turn oven off and let cake cool inside oven for 2 hours. Loosen cake for rim of pan. Refrigerate.
CHEF COMMENTS
A bit of whipped cream is nice as a garnish.
