Fudgy-Pudding Cake

INGREDIENTS

1-1/2 cups Martha Gooch Pancake and Waffle Mix
1/2 cup sugar
2 tbsp. cocoa
3/4 cup chopped nuts
1/2 cup milk
1 tsp. vanilla
3/4 cup brown sugar, firmly packed
1/4 cup cocoa

INSTRUCTIONS

Combine mix, sugar, cocoa, nuts, milk and vanilla in a 8-inch pan. Combine brown sugar and cocoa and sprinkle over the mixture in the pan. Carefully pour 1-1/2 cups boiling water over all. DO NOT STIR! Bake at 350°F for 35-40 minutes or until edges pull away from the sides of thepan. Cool in the pan 15 minutes before serving.

CHEF COMMENTS

Cake forms on the top with a fudgy pudding sauce on the bottom.

Variation: Omit nuts and add 1 c. miniature marshmallows.
