Chipotle Sweet Potatoes

INGREDIENTS
2# sweet potatoes, peeled and cubed (or 2 bags frozen steam & mash sweet potatoes)
2 Tablespoons butter or olive oil
3-? chipotle peppers, from a can of chipotle pepper in adobo sauce, minced - to taste
1 teaspoon adobo sauce from the can...
salt to taste
INSTRUCTIONS
1. Prepare sweet potatoes: steaming on the stove usually takes about 20 minutes - until fork tender.
2. in a large bowl, add sweet potatoes to butter, and mash.
3. Add peppers and adobo sauce to taste. Like jalapenos, chipotle peppers vary in heat.
4. Add salt to taste.
Serve immediately... or not. Excellent as a taco filling or a side dish.

This is a recipe from Alton Brown's Good Eats.
If you're put off by opening a can of chipotle peppers to just use a couple, you can also use Bufalo Chipotle sauce to taste.
Both canned chipotles and Bufalo sauces are available in Latino markets.
