Fennel and Cherry Tomato Summer Salad

INGREDIENTS

1 or 2 Fennel bulbs thinly sliced, some fronds chopped
1 pint cherry or plum tomatoes halved
olive oil to taste
lemon juice to taste
salt and pepper to taste

INSTRUCTIONS

Toss together and enjoy!

CHEF COMMENTS

I love my CSA, but somtimes I need to get creative to figure out what to do with all the veggies I get every week! This recipe was born out of a need to do something with a bulb of fennel other than roast it!

Add some of your favorite fresh herbs for more flavor - cilantro, thyme, oregano, parsley or dill all work nicely.
