Bob's Beef Jerky

INGREDIENTS

1/2 cup dark soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon accent flavor enhancer, found in spice section of supermarkets/walmart
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 teaspoon ground Chinese five spice
3 pounds eye of round sliced in 1/8 inch thick across grain

INSTRUCTIONS

Blend all ingredients except beef in small bowl.

Dip each piece of beef in marinade, coating well.

Place in medium bowl.

Pour remaining marinade over top of beef.

Cover and refrigerate over night.

Place the strips of beef in food dehydrator trays and dehydrate for 8-10 hours.

Oven method: place on cookie sheets, put oven temperature on 200 degrees with oven door cracked open for about 6 hours

CHEF COMMENTS

Buy cheap cuts of beef such has eye of round, trimmed off fat on the edges.
The big company's, such has Jack Links use beef brisket which is the cheapest part of the cow to buy.
