Peanut Brittle

INGREDIENTS

1 cup sugar
1/2 cup light corn syrup
pinch of salt (optional)
1 1/2 cup Planter's extra large Virginia salted peanuts, or just about any other kind of peanut
1 Tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

INSTRUCTIONS

Microwave times will vary with oven wattage. This recipe based on 1100w carousel oven. Spray a large baking sheet with cooking oil spray and place on hot pad or cooling rack. In large microwave-safe (non-plastic) bowl, combine sugar, light corn syrup and pinch of salt. Mix thoroughly, until all the sugar is incorporated well into the syrup to prevent burning. Microwave 5 minutes. Without delay, add peanuts, butter, vanilla, and stir well. Microwave 3 more minutes. Immediately add baking soda, and beat well.
Pour onto prepared baking sheet and spread with wooden spoon. Cool until set. Break into pieces. Store in airtight container.

CHEF COMMENTS

I used to stand over the stove, stirring the pot, using a candy thermometer, and sometimes getting very hard brittle. This recipe is almost fail-proof and not too hard. You'll be finished in less than 15 minutes, too.
