Green Chili Soup with Chicken or Turkey

INGREDIENTS

baked turkey or chicken leftovers, at least 2-3 cups (or browned ground turkey)

2 6 oz cans of chicken stock

2 garlic cloves

1 medium sized onion

roasted green chilis (as much and as hot as you can handle- I use a frozen container of hot)

1 green pepper, diced

salt and pepper to taste

(this goes great with monterey jack cheese quesadillas)

*optional- corn, hominy, cooked diced potato, diced jalepeno, cooked rice, stewed tomato, kidney beans (add cooked ingredients within the last hour of cooking)

INSTRUCTIONS

Add ingredients to pot on stove top set at medium high, or in crock pot on high. Cook for 2-3 hours. Put cooked ingredients in during last hour of cooking.

excellent for leftovers from dinner or a holiday
