Caramel Cups

INGREDIENTS

SHELL:
6 oz. Softened Cream Cheese
2 sticks Soft Oleo or Butter
2 cups Flour
FILLING:
1 pkg. Light Kraft Caramels
1/2 cup Evaporated Milk
ICING:
1/2 cup Oleo or Butter
1/2 cup Crisco
2/3 cup White Sugar
3/4 cup Evaporated Milk
1 tsp. Vanilla

INSTRUCTIONS

SHELL:
Beat together cream cheese and butter. Gradually add in flour. Mix well, and form into small tart pan. (Or mini muffin pan). Bake at 350 for 15 minutes.

FILLING:
In a medium sized saucepan, stir together milk and caramels over medium-low heat until melted and smooth. *Stirring constantly to avoid scorching. Spoon into baked tart shells, and let cool completely.

ICING:
Beat all ingredients together until mixture stands in stiff peaks. Spoon or pipe on top of cooled caramel cups. Sprinkle with nuts (optional).
