Stuffed Pepper Soup

INGREDIENTS

1 lb. ground beef
1 small onion, diced
2 green peppers, diced
1 28 oz. can whole tomatoes, pureed
1 28 oz. can tomato sauce
1 14.5 oz can beef broth
1 c. rice
salt, pepper to taste

INSTRUCTIONS

Brown beef with onion and pepper until meat is cooked through and peppers and onions are soft. Add pureed tomatoes, sauce and broth. Season with salt and pepper. Bring to a boil over medium heat. Add rice and cover. Simmer until rice is soft (about 20-30 minutes). We enjoy our soup with a splash of Red Hot sauce.

This recipe is perfect if you like the taste of stuffed peppers but do not have time to prepare them.
